Simple Breakfast Ideas

With a new school year upon us (sorry to remind the teachers and students of the world!), I thought I would share some recipes for easy breakfasts. I’ve always been a fan of breakfast, but I had a lot of friends growing up who often skipped. Now that I’m older, I do find that I’m always in a bit of a rush to get out the door and to work on time. I’m not really a big morning person, so I like to have easy ideas that I can eat at home or take with me to eat at my desk. Below are a couple of my personal overnight oats recipes as well as links to others that I’ve either tried or am planning to try soon.

Avocado Toast

I don’t usually follow a specific recipe when I make avocado toast, but Anne from Fannetastic Food offers some fun inspiration to get you started.


Breakfast Egg Muffins

I don’t have a picture of any that I have made recently, but I made these a lot in grad school. I always would heat them up once I arrived to my internship site and then top with salsa and hot sauce. I usually ate two muffins at a time and it was filling.


Parfaits

You don’t really need a parfait recipe. Simply alternate layers of fruit and yogurt. Finish with some granola if you like. Here is a recipe for an Apple Crisp Breakfast Parfait that I am planning on trying this fall. Yum!


Crockpot Oatmeal

I’ve never made oatmeal in the slow cooker before, but I’m very into the idea. I think I will experiment with this when the weather cools down here. (95 degree weather just doesn’t make that sound very appealing right now!) Here is a recipe I found on Pinterest that I thought sounded good: Cranberry Apple Slow Cooker Oatmeal.
